Jon De Paz
Chef De Paz brings over 16 years of culinary experience to his new role of Executive Chef. Previously, he was the chef de cuisine for Primrose in Washington DC from 2018 until 2020. He also spent time in the kitchens of The French Laundry, Eleven Madison Park, and Restaurant Daniel. Prior experience includes The Peacock Inn in New Jersey and Le Bec fin in Philadelphia, where he began at a young age.
With a focus on sustainability, Chef De Paz believes in providing the freshest ingredients and flavors available without compromising the health of the planet.
Chef De Paz was born in Guatemala and moved to New Jersey with his family when he was a year old. He is a graduate of Mercer County Community College, West Windsor, New Jersey with an associate’s degree in science-culinary arts. He is fluent in Spanish and partially bilingual in French. In his free time, he enjoys photography and almost anything in the world of art.
